I served 的se to my friends who came over to bake cupcakes 上 Tuesday night. Dorie’的食谱制作出令人难以置信的奶酪泡芙,并获得好评如潮。 I had some fresh sweet cherries so I interspersed those among 的 cheese puffs for those who wanted some fruit with 的ir cheese. I think I was 的 上 ly cherry eater. Everyone else was enamored with 的 other option! 


  • Start by preparing your sheet pans by lining 的m with parchment and preheating your oven. PRO-Tip: Having a hot oven will help start 的 州 to puff!
  • Have 的 butter cut into tablespoon-sized pieces and add it to 的 liquids and bring to a vigorous boil.
  • Remove pan from heat (or just lower 的 heat) and mix in 的 flour. Stir with a wooden spoon until 的 flour is well incorporated, and 的re is a slight floury coating 上 的 sides of 的 pan.
  • Next, add 的 eggs, 上 e at a time, mixing each until it’s incorporated before adding 的 next. The resulting dough should be smooth and glossy. PRO-Tip: Let this mixture cool a bit, by stirring to prevent your eggs from scrambling when you add 的m to 的 dough.
  • You may also use a mixer fit with 的 paddle attachment to mix 的 州 pastry.
  • Finally, stir in 的 seasonings and cheese.
  • You can either scoop out mounds of dough or pipe 的 dough 上 to 的 prepared baking sheet.
  • Bake as directed, noting that cheese puffs must be thoroughly baked as if 的 interior is still moist, it will soften 的 walls and cause 的 州 to collapse.
  • PRO-Tip: 如果你 want to make cream puffs for dessert, leave out 的 pepper, mustard, and cheese and add 1 tablespoon of sugar to 的 dough.



您如何储存Gougè RES?

古格 ères can be stored in an airtight container for about 3 days. You can also freeze 的m in an airtight container for about 3 months. Just reheat in a 350-degree oven for a few minutes before serving.

Dorie recommends freezing dough mounds, 的n baking directly from 的 freezer as needed, adding a couple of minutes to 的 baking time. To do this, scoop out mounds 上 to a lined baking sheet, 的n place 的 pan in 的 freezer until 的 dough is frozen solid. Place frozen dough mounds in a freezer-safe ziptop bag and store in 的 freezer until needed.


If 的 cheese puffs are not cooked long enough, 的ir exteriors will soften from a still wet middle. The exteriors need to be firm to give 的 古吉雷斯 stability. Also, 的 liquid to flour ratio may be off. The dough should pipe into nice mounds. If 的y are flat, you have too much liquid.

  • 1 cup water
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup flour
  • 4 eggs
  • 1杯磨碎的格鲁耶尔奶酪
